Low fat 3 spicy 3 bean turkey chili
Ingredients:
1 lb fresh ground turkey (better from the butcher)
1 can black beans
1 can kidney beans
1 can cannellini beans
1 1/2 cups cooked white corn kernals (fresh, frozen, or canned)
1 yellow onion
1 clove garlic
2 tbls olive oil
1/2 cup vegetable broth
1/4 cup chopped pickled jalapenos with carrots
fresh cilantro
1/2 cup grated cheddar cheese
spice blend: 1 tbls chili powder, 1 tbls seasoned salt, 1 tsp white pepper, 1 tsp paprikia, 1 tsp cumin
Method:
Rinse all canned beans, strain and add to large pot on low heat. Add corn & 1/2 of chopped jalapenos/carrot mixture with a pinch of the spice blend and 1/2 cup vegetable broth. Stir and let warm on low heat.
Heat olive oil in skillet, add chopped onion and garlic and cook until translucent. Add ground turkey and the rest of the spice blend. cook meat thoroughly through then add the rest of the jalapenos. stir together. Transfer meat and onion mixture to your pot of beans & corn.
Bring chili to a low simmer and let flavors meld together for about 30 minutes.
Serve up in shallow bowls topped with chopped cilantro and some cheddar cheese.
