Puff Pancake with Apples
Standard Recipe
1/2 Cup Flour
1/2 Cup Milk
2 eggs
Pinch of salt
tablespoon butter

For Apple Version:
1 cored, peeled, sliced apple
Cinnamon

Preheat the oven to 400 with a cast iron skillet inside. While oven preheats with pan, whisk together flour, milk, eggs, and salt.

You can lightly sauté the apples in butter and cinnamon as well.

Once hot, take the cast iron skillet from the oven, add butter (and apples and cinnamon if doing the apple version). Pour the batter in the searing hot pan, and immediately place back in oven. Cook 10-13 minutes until the pancake rises and the top starts to brown.

Remove from oven, and serve with maple syrup. If you don't want the apples under the pancake, you can sauté them and serve them on top of the puff pancake as well!
