White Chicken Chili
4 chicken breasts, skinned and boned
1 ½ cup water
1 tsp fresh lemon juice
1 tsp cumin seed
Simmer above ingredients for 45 minutes. Remove chicken and chop. Return to pot.
1 chopped onion
1 clove garlic
1 11-oz can white corn
2 4-oz cans diced green chilies
1 tsp ground cumin
Juice of 2 limes
3 15-oz cans white beans, undrained
Saute onion and garlic in frying pan. Add to the chicken pot. Also add corn, green chilies, cumin, lime juice and beans.
Heat to simmer for 10 minutes.
Top with the following items, as desired: crushed tortilla chips, shredded Jack cheese, sour cream and/or verde sauce
