Judy's kale and red cabbage Greek slaw with grilled chicken
Ingredients:
2 boneless skinless chicken breasts
1 bunch of kale
1/2 head of red cabbage
Italian parsley
cherry tomatoes
cocktail cucumbers
red onion
feta cheese
greek olives
Dressing:
1 clove garlic pressed
1/4 cup red wine vinegar
1 tablespoon Dijon mustard
1-1/2 teaspoon honey
2 teaspoons dried oregano
1/2 cup extra virgin olive oil
salt and pepper
season chicken with salt and lemon-pepper and grill until cooked. set aside.
rinse and clean all fresh produce and chop the kale and cabbage into thin strips. Cut the tomatoes and cucumbers into bite sized pieces and cube the feta (as opposed to crumble). Slice the olives in half and chop the red onion. Combine slaw in a large bowl.
for the dressing, combine all ingredients except the olive oil, after ingredients are combined, slowly whisk in the olive oil and whisk well until all combined.
dress the slaw with the dressing to the desired amount. Take the grilled chicken and slice in long pieces and place over the slaw.

Sorry, I don't have a photo! here's one of mom and me! This is her go-to summer salad, she probably makes this about once a week or more, and there's always something new added, whatever she has on hand... it's always delicious and filling with the chicken! can do salmon or shrimp, really anything!
