Schmargie Sandwhich

4 skewers (if wood, soak 30 minutes before using)
I head of garlic
4 pieces of good quality flatbread
1 1b of lamb sirloin, cut into 1" chunks
1/2 cup olive oil
1/4 cup fresh lemon juice
1 teas chopped garlic
4 oz goat cheese, softened
Chimichurri sauce (recipe follows)

Early in the day, marinate lamb in olive oil and lemon juice. Refrigerate until ready to use.

At least an hour before you wish to eat, Heat oven to 375 degrees. Trim top of garlic slightly. Place garlic on a piece of foil; drizzle with olive oil. Wrap with foil and bake for about 45 minutes. When cool enough to handle, squeeze garlic cloves out of skin and set aside.

Meanwhile, preheat broiler. Skewer lamb chunks and place on a baking sheet lined with foil. Broil lamb, approximately 6" from heat, for 8 - 10 minutes, or until done, turning once.

Divide Lamb between pieces of flatbread. Spread one side of bread with goat cheese, then drizzle liberally with Chimichurri and add four roasted garlic cloves.

Chimichurri sauce
1 md jalapeño, seeds and stem removed (wear gloves when handling jalapeño)
1 bunch of cilantro, large part of stems removed
1/2 bunch of fresh mint
1/8 cup olive oil
Salt and pepper to taste

Put first three ingredients in food processor. Slowly add olive oil through opening in top, while food processor is still running. Season with salt and pepper to taste.
