Mom's Sticky Rice (Yo-Fan)
2-3 Cups Sticky Glutinous (Sweet) Rice
1 Shallot
1/4 lb pork or chinese sausage (sliced)
1 small piece ginger
2-3 TBsp Sesame Oil
3 Tbsp Rice Wine
Water
2-3 Tbsp Soy Sauce
2-3 stalk Scallions
5-8 pc Dried Shiitake Mushroom
1/4 cup dried baby shrimp
pinch sugar to season
pinch salt to season
pinch blk pepper to season
Thinly slice pork to small thin strips. Soak dried baby shrimp for 5-10 min til plumper. Or can leave dried. Soak dried shitakke mushroom 10-20 min til plump. remove stems and thinly slice. Chop scallions. Chop up scallions. mince ginger. Heat wok/frying pay with sesame oil. Cook slice pork/chinese sausage first and set aside. Add in ginger and shallots first. add in rice and stir in remainder of ingredients. cook and stir frequently for 3-5 minutes til slighlty brown and fragant. Then transfer the rice mixture to rice cooker, add water and cook as usual. When sticky rice cooked/steamed, portion out and add remainder of scallions sprinkled over sticky rice and enjoy!
